Antipasto Salad
1/2 cup fresh basil leaves
1/3 cup bottled red wine vinegar dressing
1 small head romaine, cut into 1-inch pieces
1 7-ounce jar roasted red peppers, drained and cut into thin strips
1 12-ounce jar pepperoncini, drained
8 ounces marinated bocconcini, or 1 large mozzarella ball, cut into strips
8 ounces sliced pepperoni
1 12-ounce jar marinated artichoke hearts, drained and cut into halves (if not already halved)
1 cup oil-cured black olives
1/2 teaspoon dried red pepper flakes

Preparation
Chop the basil leaves in a food processor. Add the salad dressing and process until smooth. Combine the remaining ingredients in a bowl and toss with the basil dressing. Cover and set aside at room temperature for at least 30 minutes to blend the flavors.

Guacamole!

Ingredients
3 avocados, halved, seeded and peeled
1 lime, juiced
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 medium onion, diced
2 Roma tomatoes, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced

Directions
In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.

Delish! Don't forget the marguaritas!

When your tired of hotdogs, burgers and other grilled meat here is an easy recipe: Brown ground beef, drain and rinse grease when cooked, return to pan, add one to two taco seasoning packs and 3/4 cup water. Cook for a few minutes, peel and cut up potatoes, get a sheet of aluminum foil put the chopped potatoes and taco meat mixture in the foil, add a little butter fold up to seal edges and place on the grill or bake in the oven for 30 minutes. Serve with sourcream and salad. It is the best

Best Drink is called Nam Wan. It's an Asian drink mix with coconut juice, Asian Jelly, Thai Perls, and ice cubes. This drink is one of the best drinks in the summer time. Especially when it's hot outside. And the best food is nothing like eating fresh fish at the lake. Right after you catch it the clean it and bake the fish with some cilantro, green onions, peppers, soy sauce, and some hoisin sauce wrap with foils and a little lemon and wateraround outside of the foils then wrap another piece over it.

Okay, this is called an "Ommie Orange", according to my grandmother, Omarie (also my first name). I'd go visit for summers in El Paso, and was always wanting something to eat. Go figure.

All you need is an orange and an old-fashioned peppermint stick (no clue if they still make these!). The peppermint stick had a small hole down the middle, and was not hard as a rock. You know the kind I mean?

So you take your orange and use kid or your own power to juice it up inside without peeling. You kind of roll it around and squeeze it slightly in between your hands. This may take a LONG time depending on the motivation of the orange squeezer. The goal is to release as much juice from the pulp inside as possible. Same thing you do with limes before trying to slice them open and get juice out.

Once your orange is good and squishy inside, take your peppermint stick and insert it into the orange. Assistance may be needed to keep the hole small enough that the juice doesn't all spill out. Stick it in there good, mush it around the inside of the orange, then.... Start trying to suck the juice through the peppermint stick. As you progress, the hole down the middle sort of melts around the orange juice going through it and you get the orangey-peppermint liquid experience of the Ommie Orange. Be sure to clean up afterwards because you'll be a sticky mess (works great with breaking out the sprinkler and letting the kids clean up by running through!) Guaranteed to keep the youngsters busy for about an hour preparing their oranges and working on getting that juice flowing up the peppermint stick.

chillymellow, I used to do the same thing as a kid, but without the peppermint and with a plastic staw. Sounds yummy for the little ones! smile

Wheat Berry Salad with Dried Fruit



ingredients
3 cups water
1 cup uncooked wheat berries
1/2 cup minced shallots
1/4 cup cranberry juice
2 tablespoons vegetable oil
3 tablespoons raspberry vinegar
1 tablespoon balsamic vinegar
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/2 cup coarsely chopped dried cranberries
1/2 cup coarsely chopped dried cherries
1/2 cup (2 ounces) diced Gouda cheese
1/3 cup chopped green onions
1/3 cup slivered almonds, toasted
1/4 cup dried currants
1/4 teaspoon freshly ground black pepper

directions
Combine water and wheat berries in a medium saucepan; bring to a boil. Cover, reduce heat, and simmer 1 hour. Drain and rinse with cold water.

Combine shallots and next 6 ingredients (shallots through salt) in a large bowl. Let stand 30 minutes.
Add wheat berries, cranberries, and remaining ingredients to vinaigrette, and toss to combine.

Chill at least 4 hours or overnight.
