You mentioned old recipes - my Grandma was a great cook. After she passed away, many of the grandkids got to keep one of her recipe books. I find the best recipes in there! <3

kaymast24, Yes, grandma's recipes are the best! My aunts still make lots of my grandma's recipes. I need to get a copy of them to carry on the tradition. Her baked mac and cheese and fried chicken were amazing!

Yum, I love baked mac and cheese, too! I find a lot of good old fashioned comfort food recipes in the book from Grandma.

Berio's Chicken and Yellow Rice

Cook time: Less than 1 hour.

4 chicken quarters or 6-8 chicken thighs
2 buttons garlic or 2 tablespoons minced garlic
1/4 cup or less olive oil
1 tomato
1 green pepper
1 onion
2 bay leaves
1/2 to 1 tablespoon salt
2 cups rice
4.5-4.75 cups water (use less water for drier rice if you prefer)
.5-1 grams Saffron (more is better)
1 bag of frozen peas or 1 can Petit Pois

Directions:
Pre-heat oven to 350. Salt & pepper chicken & fry in Dutch Oven with onion & garlic. When half cooked add tomatoes & water. Boil for 5 minutes. Add bay leaf, salt, green pepper, rice, saffron. Stir thoroughly. Cover. Bake in oven at 350 for 20-25 minutes. Cook peas. Serve with peas or stir cooked peas in with chicken and yellow rice. Remove bay leafs. Remove tomato skins if you're fancy. You can de-bone the chicken and add to rice or serve chicken whole. (original recipe says garnish with pimentos)

Great recipe very similar to my grandmothers , we always had black beans and plantains as well . yum !
