Ok, a weird thanks today. I am thankful that my birth mother contacted me yesterday out of the blue, to let me know about her will. We talked, and after 15 or so years of no contact, we resolved some issues. Even at my age, as an adoptee, it is a relationship filled with emotion and extremely volatile because of that!

This is so easy but so good. I fry-up and add 3 or 4 slices of crumbled bacon, everything is better with bacon. 
CORN PUDDING
1 stick melted butter
1 box Jiffy corn bread mix
1 c. sour cream
1 can whole kernel corn, drained
1 can cream corn
Mix butter, corn bread mix, and sour cream together well. Add kernel and cream corn. Bake at 400 degrees for 30-40 minutes.
