SWEETLIPS SWEET POTATO CHEESECAKE
CRUST:
3/4 cup Graham wafer crumbs
3 tablespoons Melted butter or margarine
1/4 teaspoon Cinnamon
1/4 teaspoon Nutmeg
FILLING:
2-8 oz pkgs Cream Cheese
3/4 cup Sugar
4 large Eggs, separated, set aside egg yolks, beat egg whites until stiff
2/3 cup cooked Yams OR Sweet Potatoes, mashed (or Pumpkin, if you prefer)
1 teaspoon Nutmeg
TOPPING:
1-1/2 cups dairy sour cream
3 Tablespoons granulated sugar
1 teaspoon vanilla
INSTRUCTIONS:
In a small bowl, combine graham wafers, spices and melted butter. Mix together and press into 8x8" pan, either square (lined with foil) or a springform pan unlined.
Place cream cheese in large mixing bowl and beat with an electric mixer until fluffy. Beat in sugar then eggs yolks. Blend dry ingredients together and beat into cream cheese mixture. Beat in Yams or Sweet Potatoes. Gently stir in the beaten egg whites. Pour mixture into prepared pan and bake at 350 F about 1 hour or until a knife inserted in the center comes out almost clean and the top is browned. Cool on a wire rack for at least one hour, longer if it's convenient to do so.
To make topping, thoroughly blend together the sour cream, granulated sugar and vanilla in a small bowl until smooth. Pour and spread the topping on top of the cooled cheesecake and refrigerate for several hours or overnight. Cheesecake is best served after it has been in the refrigerator for 24 hours.
NOTE: I tried to post a picture, but for some reason, it's not working.

I can't figure out how to make previous post picture bigger....help !
I have same problem sometimes, Webdeb
Is this the comment you are talking about luckyma55? It's on page 4.
You can't make pics larger or smaller here at noluckneeded. You can use a site like photobucket.com to upload pics to and change the size, but making a small pic bigger usually distorts the image.
