My favorite= Steak Salad with candied pecans. Slice your favorite steak, cook with 1 tablespoon butter, a pinch of salt and pepper. Mix 1/2 cup of water with one cup of sugar in a saucepan and heat until all sugar is dissolved.
Dip in pecans with a slotted spoon til coated and set on a cookie sheet to cool. Fix a bowl of nice greens, lay on sliced steak. Sprinkle the pecans over the salad and drizzle with honey mustard dressing. So good!!

I sent this one to my Aunt smile

This is a cake we love for spring...keep it refrigerated and serve cold.

1 yellow cake mix
1 tub Cool Whip
1 cup vanilla pudding
1 can crushed pineapple, drained well
1 container Cream Cheese icing

Follow instructions to make yellow cake in 9 x 13 pan. Cool completely. Slice lengthwise in half and gently lift the top of the cake off to set aside. You should use a long bread knife for best cutting. Spread pudding on cake, then spread pineapple over pudding. Finally, spread whip cream over pineapple. Gently lift the top of the cake and replace it over the now layered bottom. Frost with cream cheese icing. Serve immediately or store in refrigerator to serve cold.

this one looks easy enough for me!! smile

Yeah, it's easy and really, really good. Sometimes, if I'm really feeling like Betty Crocker, I'll make everything homemade. But, even using box cake mix and prepared ingredients, it's really good and refreshing! I made it last night and took some to work today - a complete hit! smile

Ok here is a great recipe for anytime. You can make it ahead of time and just pop it in the oven for about 30 min - 45 min at about 325 just to heat it all through and serve.

INGREDIENTS
(depending on how much you want to make)
1 - 1 1/2 cups of rice
1 16oz sour cream
1 can of ortega dice green chili
1 pound of jack cheese (shredded)
salt, pepper,to taste and dried parsley and paprika ( or whatever spices you prefer) for color on top.

PREPERATION -(note- your going to be layering so get a dish that is deep)
cook your rice according to directions and let cool. in a bowl mix the sour cream and diced green chilis together. get your casaerol dish and start your layers . Rice about 1/4" thickness. then the sour cream and dice green chili mix then a layer of jack cheese. and you continue this all the way to the top of the dish. Finish the top with a layer of rice and sprinkle your seasonings for color and you can just cover it up till you are ready to cook and serve or throw it in the oven get all melted together and then store it or cook it and serve immediately. all your really doing is melting the chees and warming the rest of it.

This is a recipe my mom use to make to take to the desert with us for the pot luck dinners. it was easy cooking and easy clean up for being in the motorhome and everyone always loved it.

hope you enjoy it too if you try it
