pumpkin walnut fudge
Ingredients
4 cups sugar
1 cup milk
3 tablespoons light corn syrup
1 cup fresh pumpkin puree or canned pumpkin puree
3 tablespoons unsalted butter, cut into bits
1 teaspoon vanilla
2 cups chopped walnuts

Preparation
In a 4-quart heavy saucepan combine the sugar, the milk, the corn syrup, the pumpkin puree, and a pinch of salt, cook the mixture over moderate heat, stirring, until the sugar is dissolved, and cook it, undisturbed, until a candy thermometer registers 238°F. Remove the pan from the heat, add the butter (do not stir it into the mixture), and let the mixture cool until it is 140°F. Stir in the vanilla and the walnuts, beat the mixture with a wooden spoon for 30 seconds to 1 minute, or until it begins to lose its gloss, and pour it immediately into a buttered 9-inch-square pan. Let the fudge cool until it begins to harden, cut it into squares, and let it cool completely. The fudge keeps, stored between sheets of wax paper in an airtight container, in a cool place for 2 weeks.

This year I am most thankful for my new granddaughter. My daughter had just lost a baby boy to stillborn this past year. She quickly got pregnant and delivered a healthy baby girl.

Usually I spend Thanksgiving with family, but this year I will most likely be working.

Well this Thanksgiving is going to be a very hard one due to my grandma just had a heart attack, but if the powers that be see fit to let her make it thru this holiday season I would be more thankful then anyone can imagine..

I also am very thankful for my mother, without her I would be lost and I am thankful she is here for another thanksgiving, and I pray she will be here for many more. Im thankful the doctors were wrong about my little brother and he is still alive and healthy, and my older brother who brought two wonderful kids into our house that I love with all my heart

I'm sure we all have our shares of troubles in life, and no matter what I'm sure if we look deep enough we can all find something to be thankful for. No matter how bad it gets sometimes, there's always someone else who has it worst. So smile and be thankful for the little things they mean the most.

She suffered a Heart Attack, two years ago.... about this time of the year.
(and was able to pull through)
I really don't know what I would do without her...

im thankful to have my sisters and brothers, and our father this year. as we just lost our mother in march at the age of 60 to cancer. im thankful that the rest of us are still healthy and together

I'm gratefull to wake up(alive) this morning(seriously)- I lost a longtime(20 yr.) friend a couple weeks ago. She was only 47 yrs. old, worked out constantly, ALWAYS happy and upbeat, had a blood clot in her brain, she died instantly. Since she is gone-the light has left the room.

Thanksgiving, a time to reflect about what we have that we can be thankful for and for us to remember those who aren't as fortunate as we are, as Thanksgiving swiftly approaches this year, I would like to say this:

I am thankful that I have my health, and my family and people who love me. And very thankful that George Bush won't be president for very much longer! smile

I BAKE ABOUT 35 EXTRA PIES AND TAKE THEM TO SHELTER HERE IN TOWN.
I ALSO COOK A COMPLETE MEAL FOR 9 OLDER FOLKS LIVING OR MY BLOCK. I TAKE IT TO THEM OR IF THEY LIKE, THEY CAN EAT HERE AT MY HOME WITH THE GROUP OF OTHERS I COOK FOR...ABOUT 15 OR SO.
I'VE DONE THIS FOR THE LAST 17YRS. AND WILL CONTINUE AS LONG AS I AM ABLE!
SOME OF THE PEOPLE HAVE BEEN COMING OVER FROM THE FIRST...IT'S NICE TO BE ABLE TO HAVE THEM JOIN US. WE ALL LOOK FORWARD TO IT.

I DO THIS AT CHRISTMAS AS WELL.
MAKES ME FEEL GOOD!!!!! HOPE ONE DAY EVERYONE WILL MAKE TIME TO SHARE WITH OTHERS, EVEN IF IT'S JUST YOUR TIME & A LITTLE SMALL TALK, IT COUNTS!!!

Asparagus Packets
Ingredients:
24 stalks asparagus, trimmed and cleaned
1/8 ts salt
1/8 ts black pepper
1/4 ts dried italian seasoning
2 tb grated Parmesan 8 slices thinly sliced prosciutto
Method
1. Steam asparagus on top of boiling water until crisp-tender, about 5 minutes. Drain. 2. In bowl, toss asparagus with salt, pepper, seasoning and Parmesan. 3. Heat oven to 425 degrees. 4. Spread 1 slice prosciutto onto work surface. Roll up 3-4 asparagus stalks on prosciutto. Transfer to large rimmed baking sheet. Repeat with remaining asparagus and prosciutto. 5. Bake in 425 degree oven for 10 minutes. Serve warm.

Notes: If making ahead, cook recipe as noted; cover, refrigerate a few hours. Reheat gently in oven or microwave.

I am thankful for my sisters,friends and my loving soulmate.
